The Snoball is no ordinary shaved ice. Brian Hébert of Snoball Shop in L.A. breaks down what is so magical about the New Orleans summertime treat.

I’ve never had a snoball, and after interviewing Brian Hébert of SnoBall Shop, I am seriously reflecting on how I made it so far in life without even a taste. It’s now full on summer in NYC, and Brian’s pictures from SnoBall Shop are just about the best food porn a girl could ask for. There’s potential we’ll see a SnoBall Shop on the east coast as some point in the future, but for the time being, I’m considering jet-setting to L.A to finally enrich my life with the classic New Orleans dessert.

HOW’D YOU GET YOUR START BRINING NOLA TO LA? ARE YOU FROM NEW ORLEANS ORIGINALLY?

My family specifically is from a small area named LAKE CHARLES, Louisiana. My parents grew up blocks from each other. I was born in Los Angeles, but my soul is truly from the south. My cousin/business partner is originally from New Orleans and always loved the SnoBall shops down there and thought it be a great idea out here.

WHAT ABOUT THE NEW ORLEANS VIBE SEEMES TO BE A GOOD FIT FOR L.A?

The laid back, non calorie counting , more focused on the pure taste and the joy of having something that makes you smile vibe. There will always be room and time to workout but we will always be here for your cheat day.

BEING FORM NYC, SNOBALLS AREN’T REALLY TOO COMMON. DESCRIBE TOME WHAT IS SO SPECIAL ABOUT SNOBALLS AND WHY THE EAST COAST NEEDS THEM ASAP.

Man, you all are missing out. A Snoball is the best version of shaved ice ever created. The main difference starts with the ice, it’s softer than anything you’ve ever had in life. We don’t skimp on the juice at all, the flavors are all top quality and we never give less than you need or want. Our ice cream is that old fashioned creamy recipe the teaches you what real ice cream tastes like. A stuffed Snoball (adding ice cream to the middle) might change your life.

YOUR FLAVORS SOUND INSANE! WHAT DOES HURRICANE, MARDI GRAS KING CAKE, AND TIGERS BLOOD TASTE LIKE?

Hurricane is a play on the famous drink from New Orleans, it has a dark fruit punch taste. King cake gives you the taste of the icing and reminds you of the cake served during Mardi Gras. The true mix for tigers blood is a lil bit of a secret, but it has a little coconut and a lil of a few other things.

HOW DO YOU MAKE A SNOBALL? IS THERE AN IMPORTANT TECHNIQUE INVOLVED?

It’s a very important technique that is a little different for every shop. I can’t tell you minds, sorry. It’s a part of what makes us special.

WHAT’S YOUR FAVORITE SNOBALL FLAVOR?

I love banana & rum. My brother’s favorite is Polar punch & peach.

WHAT’S YOUR FAVORITE PART ABOUT RUNNING YOUR OWN BUSINESS?

The freedom to make decisions and quite quickly see the results of those decisions. It’s very rewarding and encouraging.

LOOKING AT YOUR INSTAGRAM FEED IS JUST OVERWHELMING. ANY CHANCE YOU COULD SEND SOME SNOBALLS TO MANHATTAN? OR DO I JUST NEED TO SUCK IT UP AND GET TO L.A.?

You have to come to LA. for now. Maybe in the future will be in New York. I just received a email from someone who wants to franchise out there.
